Geoff, to burn a DVD ISO you'll need to use growisofs, not cdrecord.
K3B has this built in, Tools -> DVD -> Burn DVD ISO image
growisofs -dvd-compat -Z /dev/hdX=dvd.iso
cdrecord -dao -speed=<speed> -dev=/dev/hdX dvd.iso
