You can use resize2fs to grow an ext3 filesystem while it is mounted.
I've had to do this on occasion to make more room for backups.

If you're going to use LVM, make sure to leave extra space on the
drive in case you run into this situation.  You don't want to reduce
partitions and filesystems if you can avoid it.
