 I missed the question, but I have the following input to add. Qmail is the most secure smt server. Qpopper is very easy to install and setup for pop3 -  http://www.eudora.com/products/unsupported/qpopper/index.html
Horde is great for webmail if you want your users to have all of the bells and whistles. Squirrelmail is great if you want something lightweight.
