[SATLUG] P2V conversions

I've had good luck converting older physical boxes into VMWare virtual
machines using dd to copy entire hard drives.  I've have some other
servers that are configured with either hardware or software raid.
Has anyone else come across this scenario before?

i suppose I could create partitions similar to what's on each physical
box then use dd to copy them, boot the VM from a rescue CD, edit
/etc/fstab, reinstall grub, etc.  Maybe one of you has a better way?
