You mention a business class Road Runner account, but then a dedicated
server? Is the dedicated server going to be in his home or place of
business? Personally I would never recommend hosting an important
website on a Road Runner account. They can go down for an entire day
and leave you hanging out to dry with little more than "We're sorry,
we're working on the problem".
You can buy a hosting account on a server in a data center with
redundant power supplies and internet backbone connections for less
than the cost of upgrading to RR business class.

If you've never set up Apache before you might consider using Webmin
or one of the other web-based control panels (cpanel, cp+, etc.) that
will help you get up to speed quickly.
Avoid using Sendmail for your mail server unless you are really into
pain. I'd recommend postfix instead.
