In GNOME goto System -> Preferences -> Keyboard Shortcuts

Scroll down to the Windows Management section

The two shortcuts are called:

Switch to workspace on the left of the current workspace
Switch to workspace on the right of the current workspace

Change them and you get what you are looking for.
